Sopapillas
2 cups all-purpose flour
1 Tablespoon baking powder
½ teaspoon salt
1 Tablespoon shortening
2/3 cup warm water (110 to 115 degrees F)
Shortening or cooking oil for deep-fat frying
Honey, sugar and cinnamon, or Guacamole
In a bowl stir together flour, baking powder, and salt.
Cut in the 1 Tablespoon shortening till mixture resembles coarse crumbs.
Gradually add water, stirring with fork.
Turn dough out onto a lightly floured surface; knead into a smooth ball. Divide dough in half; let stand 10 minutes.
Roll each half to 12 ½ x 10 –inch rectangle. Cut into 2 1/2 – inch squares. (Do not reroll or patch dough).
Fry, a few at a time, in deep hot fat (425 degrees F) till golden.
Drain on paper toweling.
Serve warm with honey, roll in sugar and cinnamon, or serve with Guacamole.
