Chinese Fried Rice
¾ c. uncooked rice
1 ½ c. boiling water
½ t. salt
3 T. oil
1 egg. Beaten
2 T. green onion, finely chopped
½ c. beef, pork, ham, or chicken (ground or sliced thin)
¼ c. frozen peas (or peas and carrots)
2 T. soy sauce
1. Bring 1 ½ c. water, ½ t. salt, and 1 t. of the oil to boiling.
2. Add ¾ c. uncooked rice; reduce heat to low, cover and cook for 15 to 20 minutes.
3. In a skillet, heat 1 ½ t. of the oil and cook the beaten egg on medium heat, without stirring until egg is set.
4. Invert skillet over a large plate to remove cooked egg. Cut into thin strips.
5. Use remaining oil and sauté meat and onion.
6. Stir in cooked rice and ¾ of the cooked egg, ¼ c. of peas, and 2 T. of soy sauce. Heat through and stir.
7. Garnish with remaining egg strips.
