Mexico Cooking Terms
simmer--To cook over low heat in liquid kept just below its boiling point. Bubbles may occasionally rise to the surface.
shred--To tear or cut into small pieces, either by hand or with a grater.
Mexico Cooking Utensils
molinillo— A special wooden beater with rings of different sizes on it.
tongs— A utensil used to grasp food. Tongs are commonly shaped either like tweezers or scissors, with flat, blunt ends.
Mexico Special Ingredients
chiles--Peppers added to dishes for flavor and bite. Used either fresh or dried.
lard— A solid shortening made from pork fat.
mango--A tropical Mexican fruit.
